While it may have been a delicious treat, chances are you were hungry an hour later. While most of us are concerned about the food we prepare and serve our families at home, we don’t always think about what we serve in meetings, at church suppers or neighborhood potlucks. A few simple steps can make your offerings healthier. Start with fresh fruit or vegetables. Apples, bananas, grapes and baby carrots are easy to serve. To avoid that “crash and burn” situation that coffee and pastry leads to, include some protein. Low-fat yogurt, cheese slices or bagels with cream cheese are good choices. Nuts and granola can also be good sources of protein. It’s okay to serve pastries or breakfast breads, however consider portion sizes. Most muffins and bagels today are huge and equal 2-4 bread servings. Cut them in half or quarters and make some of your offerings whole grain.
